Cooking Time: 20 minutes, plus cooling
450g (1lb) Jersey Royals, scrubbed
100g (4oz) low fat soft cheese
100g (4oz) low fat Greek-style yogurt
Finely grated zest of 1 lemon
3 tbsp tomato pickle
Mixed lettuce leaves or shredded Iceberg lettuce
250g (9oz) cooked peeled prawns
Freshly ground black pepper
Fine shreds of lemon zest, to garnish (optional)

Jersey Royals Prawn Cocktail with Light Lemon and Dill Dressing
Cook the Jersey Royals in lightly salted boiling water
until just tender - about 15 minutes. Drain well and leave until
cold. Slice or cut into chunks.
Mix together the soft cheese, yogurt, lemon zest and tomato pickle.
Season with a little black pepper.
Arrange the lettuce in 4 attractive serving glasses and top with
the Jersey Royals, prawns and dressing. Garnish with lemon zest (is
using), then serve.
Tip: This is an easy recipe to prepare ahead for a
special meal - just cook the Jersey Royals, make the dressing, then
assemble shortly before serving.
