- 400g Cooked Jersey Royal New Potatoes
- 1 Whole lobster
- 40g Micro greens
- 1kg Ripe plum tomatoes
- 40g Basil
- 40g Chervil
- 40g Dill
- 80ml Olive oil
- 1 Lemon, juiced
- Salt and pepper

Mille Feuille of Jersey Royals with poached lobster salad and garden herb nage
Method
- Cook the Jersey Royals as per previous recipes.
- Cook lobsters for 9 minutes in boiling water or steamed.
- Liquidise tomato with 100g of mixed herbs: basil, chervil,
dill, salt and pepper and strain over night in a butter muslin,
it's the clear tomato nage we need to keep not the pulp.
- To arrange, dress the Jersey Royals with salt , pepper, olive
oil and lemon juice together with a few sprigs of mixed
herbs. Layer sliced Jersey Royals in a circular manner.
Allocate half a lobster per person, slice into bite sizes and
arrange on top of the sliced Jersey Royals and serve in a bowl
plate with the chilled tomato nage and topped with micro
greens.
