Crushed Jersey Royals with feves


Serves 4

  • 1200g Jersey Royal New Potatoes
  • 200g Feves (broad beans), cooked and peeled
  • 200g Picked white crab meat
  • 500g Lobster tail de-shelled
  • 4 Langoustines tails peeled
  • 4 Large scallops
  • 4 Tomatoes, de-skinned and de-seeded cut up into dices
  • Selection of micro greens
  • Sprig of dill
  • Sprig of chervil
  • Small bunch of mint
  • Juice from one lemon
  • 100g Butter
  • Salt and pepper

Crushed Jersey Royals with feves, roast scallops, lobster, crab and langoustines.


  • To cook the Jersey Royals: Boil enough water to just cover the Royals, add salt and a bunch of mint and cook until tender.  Check with a fork.  Time will depend on how large the potato is but approximately 10-15 minutes.
  • Once the Royals have been cooked, cool with water, then crush with a fork, add butter, salt and pepper and fold in feves, Jersey crab and herbs.
  • Place slowly on a rectangular plate.
  • Meanwhile, roast the lobster, which has been cut up into four pieces, scallops and langoustines, season with salt, pepper and lemon juice, place on top of the crushed Royals and garnish with sprigs of dill and chervil.
  • Top with micro greens.
  • To finish pour it on the herb and tomato nage and garnish with a sprig of mixed herbs.
