  • 900 (2lb) Jersey Royal Potatoes
  • 50g (2oz) unsalted butter, melted
  • small bunch spring onions, finely chopped
  • 45ml (3 tablesp) Parmesan cheese
  • grated celery
  • salt

Jersey Royal Savoury Slices.


Bring a large pan of water to the boil. Add potatoes, bring back to the boil, then simmer gently for 10 minutes. Drain, then plunge potatoes into cold water to cool. Cut potatoes into fairly thin slices. Lightly butter a shallow ovenproof dish. Arrange a layer of potatoes in dish, brush with some melted butter, top with some spring onion, cheese and a little celery salt. Repeat layers three more times. Cook in oven, 200º C, 400º F, Gas no.6 for 25 minutes.


Do not peel Jersey potatoes. Simply rub any flaky skin gently from the surface. Always put Jersey Royals into boiling water - to seal in the flavour. Adding salt to the water is a matter of personal preference.
