One Pot Jersey Royals And Chicken Bake


Preparation Time: 10 minutes

Cooking Time: 40 minutes

4 tbsp olive oil

8 chicken thighs, skin on

600g small Jersey Royal potatoes, scrubbed

2 heads garlic, cloves separated but not peeled

8 sprigs thyme

250g Chanteray carrots, washed

125ml chicken stock

Heat the oven to 190°C/fan 170°C/gas 5
Heat half the oil in a large pan. Add the chicken things and brown on all sides.  You may need to do this in batches.  You want the chicken thighs to be golden brown but not cooked through. Remove and put the chicken and all the juices into a deep roasting tray
Place the roasting tray on the hob over a gentle heat and add the potatoes, garlic, carrots and herbs. Add the remaining oil and toss gently. Pour on the stock and heat until bubbling
Remove from the heat and put in the oven and cook uncovered, for 40-50 minutes or until the potatoes are tender and the chicken is cooked through
Tip:  You can also add thickly sliced leeks or quartered onions to the roasting tin
