Jersey Royals Sag Aloo

900g (2lb) Jersey Royals, scrubbed

25g (1oz) butter

1 large onion, thinly sliced

1 garlic clove, thinly sliced

½ tsp cumin seeds

¼ tsp ground turmeric

1 tsp garam masala

2 tsp grated fresh root ginger

200g (7oz) young leaf spinach

Salt and freshly ground black pepper

Cook the Jersey Royals in lightly salted boiling water until just tender - about 15-20 minutes. Drain well.
About 10 minutes before the potatoes are ready, melt the butter in a large frying pan and add the onions and garlic, cooking them gently until very soft. Add the cumin seeds, turmeric, garam masala and ginger and cook for 2 more minutes.
Tip the hot Jersey Royals into the frying pan and add the spinach, stirring it in gently until the leaves had wilted. (This will only take a couple of minutes). Season to taste, then serve.
